Much of my work has been implemented in industry. From reviewing business plans, constructing financial models and restaurant revenue management strategies, creating menu designs, to pricing menus - I have developed a strong and diverse portfolio of clients for whom I've worked with as a primary consultant. A sample of clients and projects are listed below. Many clients and projects remain confidential, but include several multi-unit food and beverage operations, and large resort hotels. Confidential projects range from demand-based pricing of menu items, cross-elasticity pricing of beverage menus, and demand-based beverage management analysis.


The severe flooding of the Nashville area in early 2010 lead to a subsequent complete refurbishment of the landmark Gaylord Opryland Resort. With the rebuild, The Opryland revamped its core, full service food and beverage outlets. The consulting projects were to develop menu strategies and update menu designs for its upscale steakhouse, Italian, Contemporary American, bar and grill, and Italian concepts. Design templates were created for restaurant, bar and catering use so the client could easily update menus on an ongoing basis.

Scala's Bistro occupies the first floor of the iconic Sir Francis Drake Hotel in San Francisco. Given it's uncomparable location on Powell Street, the restaurant had to deal with excess demand - the primary consulting question was of revenue management - how can the restaurant: 1) serve more covers and 2) increase guest spending, while maintaining the legendary guest experience?

Deliverables: Menu engineering, design, table mix analysis, operational process management, product pricing, reservation policy recommendations.

Bambu is a full service Pan-Asian restaurant located in the Canal Street section of the Harrah's New Orleans Casino Resort. The restaurant was in need of a menu engineering overhaul after a recent renovation, as well as a front of house and concept development strategy after a change in management.

Deliverables: Menu design, format and typography. Item and category placement. Operational and market positioning recommendations based on field observations, time studies and menu mix analysis.

An Iconic NYC Restaurant

A restaurant entrepreneur was presented with an opportunity to purchase an iconic New York City establishment with a complex real estate and operational structure. The opportunity required realistic financial forecasts and multiple growth scenarios to attract subsequent, appropriate investors. The consulting project was to quantify the investment potential of the business and brand.

Deliverables: Five-year proforma income statement and cash flow estimates for three business segments and a combined corporate entity.

An angel investor was approached with an offer to invest in an anonymous restaurant concept (referred to as BRASSARIE X). The investor was presented with a 12 month pro forma and business plan. The consulting project was to critically evaluate the investment potential of the project.

Deliverables: Go/No-Go investment recommendation, revised financial forecast, and a requested due diligence list.

A group of entrepreneurs with cutting edge idea need to flesh out a professional, well constructed and thoughtfully analyzed business plan to present to some of the investment community's most influential venture capitalists. The idea needed to be sized in terms of market potential and competition and long term growth plans. The business financials then needed to be forecasted and valued using multiple methods (DCF, comparable company, and precedent transaction analysis).

Deliverables: Evaluation of market potential (market sizing, competitive analysis. Full financial forecasts for single unit, multi-unit, and franchising business models. Presentation and print-ready support graphics.
